Today, I had a pizza craving. Actually I think the craving started like a week ago – but anyways, here we are with pizza.
Mike and I stopped at Harmony Farms in Raleigh to get the specialty foods that I needed for my pizza:
Some of this stuff is for his pizza and some for mine. Here’s what I used for my pizza:
1. Simple Mills Pizza Dough
Most importantly, it is gluten-free and dairy-free. I didn’t even need to add egg. I just needed oil and apple cider vinegar.
Dairy-free, gluten-free, soy-free, paleo, vegan (I believe); contains nuts
2. Kite Hill Ricotta
I have been obsessed with Kite Hill products lately. They are almond based. AMAZING. Someone posted about their ricotta on Instagram and I was lucky enough to find it at Harmony Farms.
Gluten-free, dairy-free, soy-free; contains nuts
3. Tomato’s, basil, olive oil and spinach
I’m not much for pizza sauce. To me, sauce is extra calories that just isn’t necessary. I’d rather top my pizza with olive oil and garlic, salt, pepper and red pepper flakes. Gimme ALL the veggies.
Guess what – veggies are gluten-free, dairy-free, soy-free, nut-free, no added sugar, paleo, vegan, vegetarian etc etc. EAT THEM! It’s a win/win 🙂
The dough/crust was really impressive. It’s important to keep in mind that this isn’t meant to be a fluffy dough/crust. It’s more like a thin cookie. But not sweet, it has garlic, onion and salt. Ugh. I want to go downstairs and have a late night snack of leftover pizza just from writing about it…
Mix the dough together, spread the dough on your pizza sheet. Bake for 5 minutes then add toppings. Cook for another 10-15 min. I DO NOT recommend putting the cheese on until after cooking. It’s not like regular cheese and may not hold up well in the heat.
Here is the final product. Honestly, there’s not much left and even if I knew you – I wouldn’t share :p Okay maybe I would. It was delicious and probably the best pizza I’ve ever had. It just felt REAL and WHOLESOME.
I have never had Simple Mills before but what I love about them is that their ingredients are clean. No gums. No extra garbage. Just simple ingredients. You can tell when you bite into that crust. It is REAL FOOD.
This pizza was a great way to end a fabulous weekend. Clean house, 3-mile run, younger brother is all moved into college and I finally got my skull pillow for the living room. I’m obsessed with skulls and Halloween!
ANYWAYS, if you are pursuing a paleo lifestyle or can’t have gluten, eggs or dairy – definitely check out the Simple Mills pizza dough. I haven’t had other products that they offer but I’m definitely going to be on the look out!
