High Protein French Toast

The other day, I was reminiscing about my childhood days of enjoying pancakes and fresh toast. I would spend summers with my grandmother and she would make some of the most amazing french toast using land o’lakes butter and buttery maple syrup. These days, I don’t eat this way – I got away with a lot as a kid LOL. But I decided to experiment and try to recreate my childhood french toast in a more nutritious way!

Here’s what I came up with – and it’s delicious…..

You will need….

2 Base Culture Original bread slices

2 eggs

Cinnamon or pumpkin spice

A splash of your favorite milk (I used Oatly Full Fat Oat Milk)

Avocado oil spray

Pink Salt (trust me)

Maple Syrup or honey

Instructions:

  1. Toast the bread first – I saw this because this bread must be kept in the freezer.
  2. Spray the pain with avocado oil spray
  3. In a bowl using a whisk, mix the two eggs, splash of milk, cinnamon and other spices, and a touch of salt.
  4. Once the toast is warm, let each slice soak in the bowl. Once they are drench, place them on the pan.
  5. You can drizzle the extra egg over each slice to get as much protein as possible!
  6. Cook until crispy, you can add more spice and salt on top (not too much)

The salt is a little touch that gives a similar flavor to salted butter. Once you have cooked the french toast, drizzle with some honey or maple syrup (I used maple syrup).

What I love about this version is that it is super nutrient dense and you know exactly what is in it! Full of fiber and healthy fats. This breakfast has about 20 grams of protein and more fiber than using regular bread. It usually keeps me full until lunch.
